Cajun Potatoes

             
Crispy potatoes topped with creamy cajun sauce..  Can be made in a jiffy..This is one recipe that most cooks need to have in their repertoire..
                Cajun spice is a perfect blend of spicy, pungent and earthy.. It includes onion, garlic, cayenne, pepper and many other seasonings, which is used in cajun cuisine, popular among the Acadian immigrants from Canada to Louisiana.. This spice can very easily be blended into Indian dishes, adding more flavour and taste..
                The first time I had this Cajun Potatoes, I instantly fell in love with this.. Im not a great fan of anything potatoeyy, it is the last vegetable that i would want to have ever, ( i know it surprises you all as to how can someone not like potato).. it doesnt appeal my taste buds.. But then this dish did tingle my tastebuds for sure.. Its a different story, I had been licking more of this sauce than eating the potatoes.. But yeah,, i can definitely have this once a while for a change..
                But for those who loves potatoes, this is a must try snack.. And am sure you wil want to have it again and again..

Cajun potatoes 
Ingredients:
Salt to taste 
1 tsp pepper powder 
1 tbsp cornflour
For the sauce:
3 - 4 potatoes
1 cup Mayonnaise
1 tsp cayenne pepper powder / paprika
1 tsp lime juice 
1/2 onion finely chopped
2 tbsp coriander leaves finely chopped
3 tbsp ketchup 
1 tsp oregano powder
1 tsp garlic powder / chilli garlic sauce
A dash of vinegar 
Method : Parboil potatoes with skin. Cut them into bite sized pieces. Add cornflour , salt and pepper powder and then mix all together . Fry the potatoes till brown and crisp. Take it out on a serving plate . In a bowl add Mayo and rest all other ingredients to make the Cajun sauce , mix well and pour it over the roasted potatoes . Garnish with dry or fresh coriander.


 Coat the potatoes with mixtue of cornflour, salt, pepper
Deep fry the potatoes.
 In a bowl, add mayonnaise, ketchup and chilli garlic sauce
Add in rest of the ingredients and mix well
Top the fried potatoes with the cajun sauce..

Spaghetti Bolognese

Spaghetti Bolognese is an Italian dish consisting of noodles like pasta on a bed of marinara sauce infused with flavours of basil.. Its a one pot meal for the lazy Sundays, which gives you a feeling of satisfaction of having something healthy, comforting yet scrumptious..


Ingredients:
250gms spagetti
2-3tbsp olive oil
1 kg tomatoes blanched, peeled and pureed
2 onions chopped
3 medium carrots chopped in julliennes
Salt to taste
1/4 tsp black pepper powder
2-3 tbsp tomato sauce
1tbsp chilli garlic sauce
2tsp herbs
1tsp chilli flakes
Handful of fresh basil leaves torn
1tbsp balsamic vinegar (optional)
Method: Boil spaghetti with some oil and salt as per instructions on pack til al-dente.. For the sauce, heat oil in a pan.. Add in onions and saute till transluscent.. Add carrots and stir fry on high for 2mins.. It should retain its crunch.. Then add in tomato puree, salt, pepper, herbs, chilli flakes, chilli garlic sauce and tomato ketchup.. Cook for few minutes till everything blends well.. Add in basil and give it a stir.. Then add in spaghetti and mix with light hands.. Serve warm..
Note - You can top it with parmesan cheese.. I preferred it on a lighter side..

Nachos with Mexican Sour Cream Dip

"This dip is much better than the store bought ones".. was the first comment I got for this sour cream dip.. Its a creamy dip laden with salsa and cheese.. Served with Nachos.. A match made in heaven.. Its a qucik recipe which you can make well in advance and serve your guests or family instantly.. You can even use this dip as a topping on toasts as well.. Its sure to entice your taste buds in any way you like...

Ingredients:
For the salsa:
1 tomato finely chopped
1/2 onion finely chopped
1/2 capsicum finely chopped
2tbsp tomato ketchup
2tbsp chilli garlic sauce
1tsp tobasco sauce (optional, i prefer though)
1tsp vinegar
1tbsp coriander chopped
1/4 tsp salt
Other Ingredients:
4-5tbsp sour cream
1/2 cup cheddar cheese grated / any other cheese you prefer
Method: Mix all the ingredients of salsa and keep aside for an hour or two so that the flavours blend well.. Then add in sour cream and cheese and mix well.. Serve it immediately with nachos or any chips you like.. Can even make this dip in advance and refrigerate and serve cold with nachos..

Note : If you dont have sour cream, you can substitute it with 3tbsp mayonnaise and 1tbsp yoghurt..


 Chopped tomatoes, onions and capsicum
 Add in all the sauces and salt
 Mix well and leave aside for an hour
 Sour Cream, cheddar cheese and salsa
 Mix all ingredients well
Serve with nachos..
