Paneer Makhni

Paneer Makhni is a dish rich in cashew and butter.. Its velvetty texture and the flavour of spices can take you to a different world..


Ingredients:
1 cup onions long chopped
2 cups tomatoes chopped
200gms paneer cubed
7-8 tbsp butter
1tsp shah jeera
4 green elaichi
2 tej patta
10-12 garlic cloves crushed
3-4 dry red chilles
2tbsp cashews
1tbsp honey
1/2 tbsp kasuri methi
Salt
1tbsp red chilli powder

Method: Heat half of the butter in a pan.. Add in half of the garlic, shah jeera, elaichi, tej patta.. Cook for few seconds and add in onion.. Cook for 5mins till the onions become transparent and then add in tomatoes, dry red chillies, cashews, salt and red chilli powder..Mix well.. Add in half a cup of water, cover and leave it on medium flame till the tomatoes get mushy.. Once done, off the gas and let it cool at room temperature.. Grind this to a fine puree.. And then sieve well.. Again heat remaining butter in a pan and add the remaining garlic.. Cook for a few seconds and then add in the puree.. If you find it too thick, add in little warm water as per the consistency desired.. Add in honey and kasuri methi.. Mix well.. Adjust seasoning according to taste and preference.. Add in paneer cubes, mix well and cover and leave on sim for 6-8mins.. Garnish with cream and coriander.. Serve hot..
                                       Heat Butter and add in shah jeera, tej patta, garlic, elaichi
                                          Add in onions and cook till transparent
                                    Add in tomatoes, cashews, dry red chilli, salt and red chilli powder
                                             Add in half cup water and cover and cook,,
                                           It should be soft and mushy..
                                          Grind and sieve the puree
                                         Again heat butter and add in garlic
                                           Add in honey
                                          Add in kasuri methi
                                          Add in paneer and mix.. Cover and cook for 5mins on sim..
                                          Garnish with cream and coriander

Mexican Corn

                
Corn on the cob or corn in a cup.. It is sure to lift up the mood.. We all have tried sweet corn atleast once in our life.. Its a high time to take this corn a notch up.. Make it more flavorful and interesting to eat.. Every reason to eat this corn.. Mexican corn.. Corn slathered in creamy chilli and lime dip.. It will definitely keep you wanting for more.. The sweetness of corn mixed with creaminess of mayonnaise and spiced with chilli and lime.. A must try and can be served as a salad or as a snack.. The way you like..
                I had corn cobs, which i grilled on a barbeque and then removed the kernels in a bowl.. The charred smell and flavour of the corn was very appeasing..
Ingredients:
2 corn cobs / 2 cups sweet corn
1tbsp melted butter
4tbsp mayonnaise
Salt to taste / garlic salt
1tsp red chilli flakes
1 lemon juice squeezed
1tsp coriander chopped
For garnish
Lemon slice
Coriander
Grated Parmesan Cheese
Method: Grill or boil the corn kernels / sweet corn.. Remove in a bowl.. In another bowl add all the ingredients except corn and mix well.. This dip can be used in any way.. Either apply it on the cob or mix it with the corn kernels.. Garnish with coriander and parmesan cheese.. And serve it with a slice of lemon..
Note: You can make any variations you like.. Add in cream cheese / sour cream instead of mayonnaise..
Add in cut avocado and bellpeppers / jalapenos for an extra edge and serve it as mexican avocado and corn salad..


                                       Grill the corn and remove in a bowl..
                                         Take all other ingredients in a bowl..
                                           Mix in the ingredients well and add in corn and mix..
                                         Serve with a slice of lemon...

Lemon Pudding

"When life gives you lemons, make lemonade" - for me it is when life gives you lemons make a dessert.. Dessert is the most important part of meal to me, which satiates my hunger and taste buds.. And after chocolate, it has to be a dessert made of citrus, which gives a very refreshing feel.. And so what better than a lemon pudding.. I learnt this pudding from a friend of mine, who is also a dessert lover.. We always bond over food and specially desserts and share anything new that we make.. And so this dessert was shared by her..
                Its an amazing dessert with the freshness of lemon and crunchiness of praline.. As soon as you take the first bite, a splash of flavours fill your mouth.. Sweetness of icecream, tanginess of lemons, crunch of praline, softness of the sponge and velvetty texture of the dessert altogether is what makes this dessert very appealing..


Ingredients:
150gms sponge cake
400ml vanilla icecream (room temperature)
100gms white chocolate chopped
6tsp lemon juice
1/2  cup sugar syrup ie 1/2 cup water mixed with 2tbsp castor sugar
For praline
2tbsp sugar
8-10 cashews
Method: First make praline by heating sugar in a pan on medium flame till  golden brown and then add in cashews and mix well.. Remove in a greased plate and let it cool.. Make sure there is no water on the plate..  Remove from plate and break into small chunks..

Microwave white chocolate on high for 30 secs.. Mix and microwave again for 30secs.. The chocolate will melt. Let it temper for few minutes ie it should at room temperature and in melted form only.. Add lemon juice 1tsp at a time and mix well.. The chocolate hardens first and appears crumbly in texture, you need not worry.. Keep adding lemon juice and mix well, till you get a smooth chocolate and lemon paste.. Now add 1tbsp of icecream and mix well.. Then slowly add in the whole icecream and whisk well.. Be careful, if the icecream is cold, the chocolate will solidify as you mix and it will be lumpy.. So make sure the icecream is at room temperature.. Whisk really well for few minutes till everything is well incorporated.. Now take small bowls in which you want to set the dessert.. Crumble sponge cake and make a layer in the bowl by pressing firmly with hand.. Sprinkle sugar syrup all over till the sponge soaks it well.. Now pour the icecream and chocolate mixture on the sponge.. Spread praline over the dessert and let it chill in fridge for few hours.. Serve chilled..
   Heat sugar till brown.. Add in cashews, mix and remove in greased plate..
                                        Assemble all ingredients..
                                        Heat white chocolate, temper it and add in 1tsp lemon juice..
                                        The chocolate turns hard and resembles crumbly texture..
                           Add in more lemon juice 1tsp at a time and keep mixing,...
                                      It starts turning smooth as it absorbs the lemon juice..
                                         The chocolate becomes smooth and runny..
                                       Add in 1tbsp room temperature icecream and mix..
                                       Add the mixture in icecream and mix well..
    Crumble sponge cake and layer it in the bowl,.. Sprinkle with sugar syrup..
    Fill in icecream chocolate mixture and spread coarse praline on top.. Refrigerate for few hours and serve cold..
